Greek Yogurt Pancakes

I always have a large carton of Greek Yogurt in the refrigerator. It's a yummy way to add protein to smoothies, use in place of mayo, sour cream, or enjoy topped with fruit & toasted almonds.

Here is a favorite recipe of mine for Greek Yogurt Pancakes. I make these every week and freeze a couple dozen to pop in the toaster for busy mornings. Hope you enjoy this as much as I do!

Ingredients:

  • 1 1/2 cup Greek Yogurt (Plain or any flavor you like. Remember, flavored will have more sugar.)
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 1/2 tsp. baking soda
  • 2 egg whites
  • 3/4 cup soy milk
  • Non stick spray

Directions:

Combine all dry ingredients. Whisk together the wet ingredients and pour into dry ingredients.  Stir until mixed, do not over mix.  Heat non stick pan (sprayed with non stick spray) on medium heat.

Scoop 1/2 cup batter onto heated pan. Flip when a couple dozen bubbles appear. Cook until golden brown. Enjoy while hot, top with organic honey, fruit, trail mix and/or nuts.

I serve my pancakes on a wooden cutting board with fresh fruit, topped with yogurt & toasted almonds. I love to sip a protein shake & soy latte on the side. Aloha!
