Sparkly Pink Crystal Cookies

I love sweets but not the guilt. But sometimes, a cookie just isn't a real cookie without butter and sugar.  Here is a recipe that is similar to the one my mom used to make for us as kids.  Her version has 3x the butter and sugar (and Mom never ever feels guilty btw), my version has less butter and a mix of sugar and the plant extract stevia.

I saw a similar recipe in a magazine that used gold sugar, but I wanted to make it pink and with healthier dark cocoa. I am making this over the weekend but wanted to get you the recipe asap.  Check back and I'll post my step by step pictures, pink apron and all!

Dark Chocolate Pink Crystal Cookies


  • 1 3/4 cups flour
  • 1/2 cup unsweetened dark cocoa powder
  • 3/4 cup unsalted butter softened
  • 1/2 cup white sugar (I know, I'm sweating as I type this!)
  • 1/4 cup stevia
  • 1 Tbs. orange zest
  • 1 large egg
  • 1 1/2 tsp pure vanilla extract
  • 1 egg white
  • Pink crystal sugar
  • edible pink stars
  • pink dusting sugar or dust



Whisk together flour, cocoa, salt. Set aside.  In mixing bowl, beat butter and sugar with orange zest til fluffy.  Beat in egg and vanilla, stir in the flour mixture.  Blend but don't over stir.

Transfer dough to wax paper, form into a log (or barbell without the ends 🙂 and roll tightly.  Refrigerate until solid about 60 min, rotate every 15 min. so it holds it's shape.

Heat oven to 350, brush the dog with egg white and roll in sugar and star sprinkles.  Tip: Cut log into thirds and do different colors or different combinations on each third.  Cut log into 1/4 inch rounds and place on cookie sheet.

Bake until the cookies are set and slightly bounce back when touched, 10 min.  Cool. 35 cookies 🙂
