Got Over Ripe Bananas?

This is one of my all time favorite recipes! This fool proof recipe has been in my family for decades. I modified it so it's "lower" in  sugar than traditional banana bread and super easy for busy people. This is a delicious way to use up over ripe bananas. So before you toss out those too ripe bananas, make this yummy bread. It's delish to reheat in the toaster oven.

Nutrition Facts: Bananas

Bananas are an excellent source of potassium, very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Vitamin C, Potassium and Manganese, and a very good source of Vitamin B6. The downside is that most of the calories are from sugar (natural sugar btw.) To me, that makes it a good pre-workout snack to give me lots of energy to max out my workouts.

Bananas are nature's on the go, pre-wrapped snack.

Those are a few of the reasons I stock up and have them peeled and wrapped in the freezer to add to smoothies and protein shakes, put them in the kids' lunch boxes, my gym bag, have them pre-workout. But sometimes I have too many and they aren't eaten as fast as I thought they would be and they get over ripe.

What do I do? I make my amazing Kona Hawaiian Banana Bread. I really hope you enjoy this recipe, it's been in my family for decades. I modified it so that it is lower in sugar (uses Stevia), you can add flax seeds, trail mix, oats, wheat germ, etc. to make it even healthier. Aloha!

Tips:

  • add a handful of trail mix, oats, wheat germ or flax seed to the mix boost the nutritional value
  • make a double batch and freeze one for later
  • enjoy as a pre workout treat for a blast of energy
