Recipes: Coconut Chicken, Hula Rice & Green Salad with Raw Veggies

Healthy. Simple. Fit Fast Food.

I love meals that are clean and healthy, simple and fast to make, easy to clean up.  Here is a meal that I make a few times per month for my family. Hope you enjoy it too! This recipe takes me about 15 minutes to make. Aloha!

Coconut Chicken & Rice

Coconut Rice Recipe

Ingredients:

  • 1 Cup White / Jasmine Rice
  • 2 Cups Light Coconut Milk

Directions:

Rinse rice until water runs clear.  Pour coconut milk in, put in rice cooker or on stove. If cooking on the stove, heat uncovered until boiling. When boiling, cover and lower to simmer 15 min.

Coconut Chicken Recipe

Ingredients:

  • 4-6 thinly sliced skinless free range chicken breasts
  • 1 cup coconut flour
  • 2 large eggs
  • 1 cup Panko crumbs
  • 2-3 Tbs. coconut oil
  • 1/4 unsweetened coconut flakes

Directions:

Heat coconut oil in non stick pan on medium.  While pan is heating, put coconut flour in small dish, beat eggs in another dish, put Panko crumbs in another dish.

Rinse and pat chicken dry.  Using a fork, cover chicken in coconut flour.

Dip in egg wash.

Cover in Panko.

Place in heated pan with the coconut oil. Repeat with all chicken breasts.  Cook flipping once so each side is golden browned.  Top with coconut flakes.

Serve with Coconut Hula Rice and side salad with raw vegetables drizzled with my Magic Maui Salad Dressing that literally makes salad disappear.
